Here’s a simple but effective recipe that really brings out the flavour in the cauliflower.
Prep time – 5 mins, Cooking – 15 mins, Serves – 6-8 people
1kg Farrington’s home-grown cauliflower
240ml good quality olive oil
1 tablespoon finely sliced garlic
2 tablespoons lemon juice
1 teaspoon salt
1/2 teaspoon / few twists black pepper
2 tablespoons – freshly grated parmesan
Few Chopped chives for garnish
Preheat oven to 240c or Gas Mark 6
Break up the cauliflower into florets and place in a large sauté or roasting pan. Drizzle over the olive oil and add the garlic, lemon juice and seasoning. Give it a stir to ensure the oil and seasoning has coated everything. Place the pan in the oven and cook for 15 minutes, stirring occasionally to ensure even roasting. Remove from the oven and sprinkle over the parmesan. Garnish with chopped chives and serve immediately.
